Comfort Food

I made some Garlic Cheddar Biscuits on Sunday and my youngest asked for gravy to go with it. It's been so long since I've made gravy from scratch. I didn't have any sausage, but I did have bacon! I found a recipe online and gave it a try. It turned out pretty good. It was nice to have measurements. I usually just throw in flour and milk and hope for the best. This one is a keeper.


For the biscuits I use the Bisquick mix and recipe. I follow the drop biscuit directions and mold them with my hands to get a better shape.

Garlic Cheddar Biscuits


2 cups Original Bisquick mix
2/3 cup milk
1/2 cup shredded cheddar cheese
2 Tbs butter
1/8 tsp garlic powder

Preheat oven to 450 degrees F. Stir Bisquick mix, milk, and cheese together until soft dough forms. Drop biscuits on cookie sheet or mold with hands to form biscuit shape. Use a little dry mix on hands so dough won't stick. Bake at 450ยบ for 8-10 minutes or until golden brown. Mix 2 tablespoons butter, melted and 1/8 teaspoon garlic powder. Brush over warm biscuits.



Bacon Gravy

4 Slices bacon, cut into small pieces
1/3 c flour
salt to taste
black pepper to taste
3 c milk

Cut the bacon into small pieces. Put it into a large skillet and fry it over medium heat. Once the bits of bacon are well browned whisk in the flour. Continue stirring until the flour absorbs all of the fat. Add the salt and black pepper. Slowly whisk in the milk. Continue stirring until the gravy boils. Allow it to boil gently for about 5 minutes or until thick.

Slacker



I am a slacker over here on AwesomeAsana. I am not a slacker everywhere else. My 365 project is taking up a lot of my time and so is taxes, kids, house, etc. It's crazy making! I think it's about time to rent a yurt somewhere in the woods and escape for a few days. Care to join me?

Side note: I want to remember that when making cupcakes, or cakes, from a box, always remember to use the egg white version. That cupcake tasted so light and perfect! I can never remember which way is best, whole egg or egg white. It's egg white!

Tuna Melt


I was thinking it was about time for a food post. I made tuna melts for lunch yesterday. I'm sure a recipe is not necessary but I'll tell you what I did just in case.
  • melt a couple tablespoons of butter in a bowl
  • mix tuna and mayo. just enough mayo to hold the tuna together
  • layer cheese (I used ceddar), tuna, then cheese on the bread
  • brush butter on the outside of the top piece
  • place butter side down in a hot pan on medium heat
  • butter the top piece
  • turn when light brown and cook on other side
  • place on plate, cut in half, and serve
I was 15 when I had my first tuna melt. I was visiting my aunt and uncle in Washington for a summer. My cousins wife made us one for lunch. I loved it and have been making them ever since.
