
I made a pork roast for the first time today. Pork scares. Bacon, I love! Other pork products, not so much. For some reason I decided that I needed to make something pork like for Easter. Since I am not a huge fan of ham I went with a pork roast. Here is the recipe I used.
INGREDIENTS
1 pork roast
3 cloves garlic, sliced
1 tsp salt
1/2 tablespoon black pepper
3 bay leaves
1/2 cup balsamic vinegar
1 teaspoon dried thyme
DIRECTIONS
1. Preheat oven to 325º
2. With a knife, pierce top of roast. Force garlic slices into the cuts. Sprinkle the roast with salt & pepper. Place bay leaves in the bottom of the roasting pan, and set roast on top of bay leaves, fat side up. Mix vinegar and thyme in a small bowl, and pour over the top of the roast.
3. Bake in the preheated oven 2 1/2 hours or until internal temp reaches 160º. It's important to watch the temp. I let it cook a little too long and it dried out a bit. Let the roast rest for 10 minutes when done before slicing.
