Pork!



I made a pork roast for the first time today. Pork scares. Bacon, I love! Other pork products, not so much. For some reason I decided that I needed to make something pork like for Easter. Since I am not a huge fan of ham I went with a pork roast. Here is the recipe I used.

INGREDIENTS

1 pork roast
3 cloves garlic, sliced
1 tsp salt
1/2 tablespoon black pepper
3 bay leaves
1/2 cup balsamic vinegar
1 teaspoon dried thyme

DIRECTIONS

1. Preheat oven to 325º

2. With a knife, pierce top of roast. Force garlic slices into the cuts. Sprinkle the roast with salt & pepper. Place bay leaves in the bottom of the roasting pan, and set roast on top of bay leaves, fat side up. Mix vinegar and thyme in a small bowl, and pour over the top of the roast.

3. Bake in the preheated oven 2 1/2 hours or until internal temp reaches 160º. It's important to watch the temp. I let it cook a little too long and it dried out a bit. Let the roast rest for 10 minutes when done before slicing.

Listen




Hey, look who is blogging on a more regular basis! Yeah, It's me! Hi! I'm even going to talk yoga! Amazing, isn't it?

Yoga was all about backbends today. Always good for the thinking process and clearing the mind. It takes so much concentration to get into them that I always come away from classes restored, focused, and ready for anything. Bring on anything!

I do realize that the picture isn't really relevant to the post but I took it today, and wait, I'll tie it in real quick. Ears. Listening. Yoga is all about listening to your body and doing what is right for you at that moment. One day your balance is amazing and the next it's crap. One day you can hold crow for minutes the next it's impossible. Our bodies change from day to day. Our energy level changes. Learning to listen to what your body is telling you is most the important thing about yoga.

Yoga



I am about to go to a yoga certification conference. I have been practicing on my own for about 5 years (I think) now. It is time for me to put that knowledge to good use and start teaching. I have already been offered a position at a local studio and I will be working with women that I truly enjoy and respect. I have this month to study and prepare. The certification weekend will be May 8th & 9th. I can't wait!
